Chewy & Soft Gingersnap Cookies

Ingredients

    1. 2 1/2 cups flour
    2. 2 teaspoons baking soda
    3. 1 teaspoon ground ginger
    4. 1 teaspoon ground cinnamon
    5. 1/2 teaspoon ground cloves
    6. 1 cup white sugar
    7. 1 cup margarine or 1 cup butter
    8. 1 eggs
    9. 1/4 cup molasses
    10. 1/4 cup sugar, on a plate for later

Directions

  1. Mix the flour, baking soda, ginger, cinnamon and cloves well and set aside.
  2. In another bowl mix with a beater 1 to 2 minutes the sugar, margarine, egg and molasses.
  3. Add the dry ingredients and mix by hand.
  4. Take one good size tablespoons of dough (or more to make a bigger cookie) and roll into a ball.
  5. On a plate put at least a 1/4 cup of sugar.
  6. Then roll the balls into the sugar.
  7. Bake at 350 on an ungreased cookie sheet (air-insulated type is the best) for 10 to 12 minutes.

'Tis the season for family, friends and good wishes.  I am glad that this year I will be enjoying my Holiday season with the loves of my life - Ainsley and Ryan. 

We have decided our plans for this season.  On Christmas Eve we will spend the day at my moms and have supper there.  Once we have finished off we will go to Monarch and spend the night and wake up Christmas morning at my dads.  I am very excited to have time to spend with both of my parents and my blended family.  For the new year we are off to the Hat to visit Ryan's family and ring in the new year.

Over the weekend we finished all of our Christmas shopping and it now all under the tree.  Just need to send the few that are going out west soon.

I love this time of year very much!!  Stay tuned for more...

Life is wonderful and there are many wonderful things coming up that will make things a little hectic but at the end of the day it being hectic doesn't matter in the least.  It is year end assessment time at work again and it is due by next Friday.  Mentoring starts on Wednesday and that will be a blast meeting and helping the new hires learn and develop.  I am soo happy that I have been given the opportunity to develop and shine in something that I love to do - HELPING OTHERS!!


Negativity can't keep me down, I keep going up and UP! I have never been this excited to live everyday for me and for Ainsley!  I have such a wonderful family and friends and boyfriend that I couldn't ask for anything better.  I love you all! <3 xox

It is frosty out side, cuddled nice and warm with my two favorite people and cat.  Time to reminisce about the past week. 
Last I had mentioned is that we were going to Medicine Hat to visit Ryan's family last weekend which we did.  It was a great weekend with fabulous people.  It was a beautiful fall weekend.  I cannot wait to go back.

Monday was Halloween.  We were all hippies during the day and at night we dressed Ainsley up as a zombie.  SHE HAD SOO MUCH FUN!!!  Below is a picture of our little beast.
 
Off to make some home made chicken noodle soup today for my little family (minus cat).  I am hoping it will turn out to be amazing.
